Ingredients
- 4 Romaine Lettuce leaves
- 1 Filipino Long Eggplant
- 2 carrots shredded
- 5-10 cherry tomatoes
- 1 Japanese Cucumber
- 1 stalk green onion
- half avocado
Sauce
- 1 tbs hoisin sauce
- 1 tbs chopped fresh parsley
- 1 tbs soy sauce
- 1 tbs sesame oil
- half lemon cut in wedges

Instructions
- Dice all of the vegetables except the avocado and carrots. Follow the measurements to make the sauce, and sauté the vegetables with a teaspoon of olive oil and the homemade sauce. Save 2 tablespoons of sauce for the end. Spoon sautéd vegetables in your lettuce wrap, and garnish with avocado, shredded carrots, and radish slices. Add a teaspoon of sauce and squeeze a little lemon to each lettuce wrap.
