Aloha Oahu Fresh family! I don’t know about you but I am thankful that the heavy wind has abated…last weekend I spent some time at Kaka`ako Park and thought that the dog might blow away…the chair did! The weather has been wreaking havoc on our farmers’ greens, at least those farmers on Windward side and some in central Oahu. Luckily we’ve got some wonderful organic keiki greens from Wai`anae again…thank you for the feedback on those, it helps us and the farmer! Along with the baby greens this week we’ve also got zucchini, mushrooms, sweet potatoes, sugar snap peas, and round eggplant.
Here’s what you might try in the kitchen with this week’s produce:
Eggplant & Mushroom Pizza Pizza and wine and Friday night movie!
Sugar Snap Peas and Mushrooms in Wine Sauce
Zucchini “Fettucine” with Tomato Sauce This is a great way to use your zucchini especially if you are trying to eat less pasta or refined grains. It’s fresh tasting and light, and would also be great topped with pesto or classic oil and garlic sauce.
Sesame Dressing Try this dressing on those amazing organic greens, maybe with shredded chicken, tofu, or shrimp for a healthy and great tasting lunch. Your officemates will be jealous!
